Egg Muffins are such an easy way to prep breakfast in advance and have a bunch ready for the entire week! This recipe is so versatile and can accommodate so many different types of your favorite veggies!
Recipe Type: Breakfast
- 1 Tbsp Olive Oil
- 1 medium onion, chopped
- 1 red pepper, chopped
- 3 raw turkey sausage links – skin removed
- 12 eggs
- ½ tsp sea salt
- ½ tsp pepper
- 1 cup spinach, chopped
- Heat oil in a skillet. Once hot, add onion and pepper and cook until caramelized. Add sausage meat and cook until no longer pink. Allow to cool.
- Meanwhile, in a mixing bowl, beat together the eggs, salt, and pepper. Stir in the spinach. Mix in the sausage mixture. Pour into greased ramekins or muffin tins.
- Bake for 20-25 minutes or until cooked thoroughly.
Try adding any of the following for other flavor alternatives: broccoli, fresh diced mushrooms, parmesan cheese, diced cooked carrots, chopped cooked turkey bacon.
